This desert animal is used for everything, for transportation, agriculture, etc. Milk and meat are also of good quality and the inhabitants of deserts consume a lot. The hair and skin are also used by artisans to make garments and useful.
However, dromedary milk has a problem. It can be taken as liquid or butter, but you cannot make cheese because it is not cooked. Therefore, the UN FAO has been trying to solve this problem since 1985. Milk has been taken from Tunisia, Niger, Saudi Arabia and Somalia, finding the cause of immorality.
It seems that the proportion of proteins and minerals present in milk composition is the cause of non-coagulation. Therefore, with the addition of casein, calcium salts and coagulant enzyme, different types of cheese with dromedary milk have been made. Testing in Tunisia and Saudi Arabia has strengthened the manufacturing process.
Now scientists want to make a milk curd kit so that small cheese productions can be achieved in very remote and isolated families.
In case of obtaining cheese, those living in the desert would have food at hand when in droughts there is a shortage of milk.
