The technological center AZTI-Tecnalia has managed to put in value several by-products of the tomato industry, turning them into ingredients for meat and bakery products. In fact, it has managed to isolate the fiber from the by-products of vegetable origin of the tomato industry.

Vegetable fiber from tomato improves the nutritional quality of these products. Fiber is a component with beneficial physiological effects (protects the organism from various diseases).

Likewise, with the use of the fiber of the tomato, products with new sensory properties can be made. It could be used to change the texture of foods as an ingredient to give pleasant odors and flavors. In addition, it can prevent the use of other additives such as dyes.
