We all prefer freshly squeezed orange juice, but often drink packaged by indifference. However, there are no differences. Packaged juice is pasteurized to eliminate disease-causing microorganisms, but in the process the taste changes. Researchers at the University of Florida have managed to prepare a packaged juice with the same flavor as the freshly squeezed one.
To do this they use carbon dioxide under pressure throughout the process and at the end they separate the juice and gas. Thus, microorganisms die without altering the taste of juice. Although the expiration date is similar to that of other packaged juices, the couple of months, vitamin C is better preserved. Those who have tasted it say it is like the freshly squeezed.
